Fruit Popsicles Three Ways
If you’re looking for a sweet treat to beat the summer heat, try any of these delicious fruit popsicles! They’re a great way to use any leftover fruit before it would go to waste, which is great for your budget and the world!
Creamy pineapple mango popsicles
Ingredients:
- 2 mangos, peeled and diced
- ½ cup pineapple juice
- ½ cup nonfat vanilla yogurt
Directions:
- Place the diced mangos and pineapple juice in a blender or food processor and blend until pureed.
- Fill the popsicle mold halfway with the pureed mixture, then freeze for 20 minutes.
- Add 1 tablespoon of yogurt and freeze for another 10 minutes before filling the rest of the popsicle mold with more pineapple mango puree, leaving room for expansion.
- Freeze until firm, about 3-4 hours.
Makes 6 popsicles.

Tangy mixed berry popsicles
Ingredients:
- 1½ cups frozen mixed berries, or fresh berries of your choice
- ¾ cups cranberry juice
Directions:
- Place the mixed berries and cranberry juice in a blender or food processor and blend until pureed.
- Place the pureed mixture in the popsicle mold leaving room for expansion.
- Freeze until firm, about 3-4 hours.

Ingredients:
- 8 large strawberries, fresh or frozen
- 2 bananas, sliced
- Popsicle mold
- Optional: 2 Tbsp. of chia seeds (for more fiber and omega-3 fatty acids)
Directions:
- Place the strawberries and sliced banana in a blender or food processor and blend until pureed.
- Place the pureed mixture in the popsicle mold leaving room for expansion.
- Freeze until firm, about 3-4 hours.

Helpful Tips!
- If you do not have popsicle molds, you can use empty yogurt cups or small cups, filling each about ¾ of the way full. You can place foil on top of the cups and insert a popsicle stick to each cup.
- To remove popsicles, squeeze the sides of the mold, twisting them slightly. If necessary, rinse the outside of the mold with hot water until the popsicle releases from the mold.
