Spinach and goat cheese stuffed meatloaf recipe
As cold weather sets in, my taste buds start craving meatloaf. Once thought of as an unhealthy dish, meatloaf can actually be pretty nutritious with a few tweaks. It’s just a matter of swapping out some ingredients and leaving out others — like heavy stuffing, extra egg, sugar, gravy, and fat found in non-lean meats. Enjoy this take on a healthier version of stuffed meatloaf!
Ingredients
- 2 ½ – 3 cups ground beef, turkey, or other 80 percent lean meat
- 1 – 1½ cups spinach
- 1 red onion, chopped
- 1 green pepper, chopped
- 1 Tbsp. minced garlic
- ¼ cup breadcrumbs
- 1 egg
- 6 leaves rosemary, chopped
- 6 leaves basil, chopped
- Dash of salt and pepper
- Other spices as you like, or anything else you like in your meatloaf
- 2½ goat cheese
Directions
- Mix ground meat, onion, pepper, breadcrumbs, egg, rosemary, basil, garlic, salt and pepper in a large bowl.
- Once combined, lay mixture flat on a cutting board (I used tin foil) so that you can begin stuffing.
- Place the spinach in the center of the meat with the goat cheese on top.
- Reform the meat around and then on top of the spinach and goat cheese until it’s in the shape of the meatloaf.
- Cook at 350-375° for 45 minutes.
- Cool and serve.
