Air fryer recipe: Zucchini chips
These air fryer zucchini chips are a great snack or side for any meal. They’re crunchy on the outside and soft on the inside. Using an air fryer makes them quick, easy, and guilt-free.
Making homemade zucchini chips in the air fryer allows you to control the ingredients and how they’re cooked. Instead of drowning them in oil or thick batter, make them a healthier way by lightly spraying them with olive oil and using an air fryer. You won’t even miss the restaurant version. Enjoy!
Recipe ingredients:
- 1 medium zucchini
- 1 egg
- ½ cup breadcrumbs (any kind, but panko for a nice crunch)
- ½ cup all-purpose flour
- ¼ cup parmesan cheese
- Olive oil
- Salt and pepper
- Marinara sauce (optional)
Recipe steps:
Preheat air fryer to 370°F. Slice zucchini into ¼-inch rounds and pat dry with a clean kitchen towel. In a small bowl, whisk the egg and set aside. In a medium bowl, combine the breadcrumbs, all-purpose flour, parmesan cheese, and salt and pepper. Dip the zucchini rounds one at a time into the egg mixture first, then into the breadcrumb mixture. Place in a single layer in the air fryer. Drizzle with olive oil and air fry for 11-13 minutes or until golden brown and crispy. Serve immediately with marinara sauce for dipping if preferred.
